KIKU® Apple Nut Muffins
In addition to eating KIKU® apples fresh, they make a wonderful addition to your muffins! Simply fold KIKU® apples and your favorite fillings into your muffin batter. The sweet juices of KIKU® apples meld perfectly with the warming scent of cinnamon and make a great morning or on-the-go snack.
Ingredients
1 cup KIKU® apples, peeled and chopped
½ cup sugar
1 cup all-purpose flour
1 tsp baking powder
1 tsp cinnamon
½ tsp salt
1 large egg
½ cup milk
3 Tbsp canola oil
1 tsp vanilla
3 Tbsp chopped walnuts
3 Tbsp raisins
Directions
Preheat oven to 375° F.
In a small bowl, combine the apple and sugar; set aside. Combine the flour, baking powdered, cinnamon and salt. In another bowl, whisk the egg, milk, oil and vanilla; stir into dry ingredients just until moistened. Fold in the apple mixture, walnuts and raisins.
Coat muffin cups with cooking spray or use paper liners. Fill three-fourths full with batter.
Bake for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from a pan to a wire rack. Serve warm.
